Downtown San Antonio belongs to the ghost tours. Five of the nine spots here walk or drive you past places like the Alamo and the Menger Hotel. If you only do one, I'd start with Sisters Grimm Ghost Bus Tour, because it actually gets you inside the Menger and into an old cemetery after dark. It's $55, ages 8 and up, and about 2.5 hours. Wear closed-toe shoes for the cemetery part.
For real screaming, there's one big haunt: Howl-O-Scream at SeaWorld San Antonio, with five haunted houses, eight scare zones and three shows. It's included with park admission and meant for a mature audience. Outdoors, Nightmare at Owl Creek has six haunted trails for $39, including a Wild West Cowboy Trail for families. FYI: the Terrifying Trail and Blackout Maze may be too much for kids 12 and under. Out in New Braunfels, Sundrop Springs Haunted Trail does a daytime walk for kids and a scarier version at night (12 and up). Pig races too. Sure.
Just one here, and it's a big one: SeaWorld's Howl-O-Scream, from 7 PM to park close.
